Hand-picked at peak ripeness, the cherries undergo a prolonged 15-day fermentation before being dried using a combination of solar and mechanical methods. The result is a clean yet expressive Castillo Natural that showcases refined sweetness, structure, and the quiet elegance of Cauca’s highlands, a coffee shaped by tradition, resilience, and intentional processing.
